I've done a search and couldn't fine anything.
Anyway, my question is, is it possible to not have the 'time spent online' bit switched on, or a way to make it invisible to normal users?

You can remove the "time spent online" from the member profile template, which will hide it from everyone. There is no way, however, to hide it from only normal users.
